Smoked salmon ice cream

What if you accompanied your traditional end-of-year meals with an ice cream or savory sorbet? Yes, you’re not dreaming: it’s delicious and even more exquisite with the good products of Terres-de-Meuse!

The ingredients

For 4 people

 

  • 250 g smoked salmon (Scandinavian Flavors)
  • ½ shallot
  • 1 lemon
  • 100 g cottage cheese
  • 100 ml liquid cream
  • 1 tablespoon tarama
  • 2 tablespoons dill
  • Salt and pepper

Preparation

1. Peel and finely chop the shallot.

 

2. Reserve 100 g smoked salmon for decoration. Blend the remaining salmon with the fromage blanc, liquid cream, tarama, 2/3 of the dill and the juice of half a lemon.

 

3. Add the shallot and blend again. Season with pepper and salt.

 

4. Set the ice cream in an ice cream maker for around 30 minutes.

 

Presentation suggestion:

Spread a few salad leaves, the smoked salmon set aside, a slice of lemon, possibly some blinis, the scoop of ice cream and sprinkle with dill.
