For 4 people
- 150 g mascarpone
- 10 cl crème fleurette
- 1 egg yolk
- 1 pinch saffron (Safran de Cotchia)
- 4 slices smoked salmon for presentation (Saveurs scandinaves)
- 1 lemon
- dill

1. Cut the salmon into thin strips and season with the dill and lemon juice.
2. Mix the mascarpone, cream egg yolk, pinch of salt, saffron and a few diced lemon pulp.
3. Set for approx. 30 minutes in an ice-cream maker.
Disperse the salmon strips and place the scoop of saffron ice-cream on top. You can also offer this preparation with diced avocado and a slice of lemon
