The ingredients

For 1 cake

 

  • 135 g pastry flour
  • 120 g brown sugar
  • 270 g carrots
  • 1 heaped tablespoon sunflower or walnut oil
  • 10 walnuts
  • 1 packet baking powder
  • 3 eggs
  • A few pinches cinnamon

Preparation

1. Preheat oven to 180°C.

2. Peel and finely grate the carrots.

3. Powder the walnuts (or crush them if you want to add crunch to the cake).

4. Mix the whole eggs with the brown sugar.

5. Add the remaining ingredients to this mixture: flour, walnuts, oil, yeast, cinnamon and finally the grated carrots.

6. Butter a baking tin and pour in the mixture.

7. Bake for 30-35 minutes at 180°C.
